Spud specialist The Jacket Inn set for expansion
A popular potato place is relishing the delicious prospect of expansion.
The Jacket Inn has been serving up baked spuds with a range of toppings and salad for over a year now at Jacky Whites Market.
And it’s proven so popular that plans are being cooked up for the business to take over an additional unit.
Owner Glen Conley said: “Everyone’s asking for sweet potatoes and quesadillas.
“With us only having a small unit, you are a little bit on top of each other when you’re doing that.”
Of the expansion into an adjacent unit, he said: “We’re basically doing for what the customers want.
“Half of the unit will be a seating area for 12 people, the other half will be the prep area for us.”
The Jacket Inn will also start to deliver - albeit within a small radius.
“It’ll be in and around the Bridges and the surrounding areas,” Glen explained, “the likes of Park Lane and City Hall.”
Glen is hopeful that if all goes smoothly, the transformation will be complete by late August.
