The Karbon Grill will be a 100-seater Pan-American eatery, aimed at hotel residents and non-residents, which will open within the hotel at the end of April.

It will have a contemporary design that reflects the Hilton Garden Inn brand, while the name is a twist on carbon to pay homage to Monkwearmouth Colliery which once stood on the site.

As well as Pan-American cuisine, the restaurant, which will be open daily for breakfast, lunch and dinner, will offer Mexican and Latin fusion dishes, as well as regional specialities.

Diners will be able to tuck into signature grill dishes such as steaks, ribs, burgers, seafood, tapas and sharing platters.

A separate children’s selection will be available for younger visitors and a tailored bar and room service menu will also be available for residents at the Hilton Garden Inn.

Complementing the restaurant, the Karbon Grill will also have a contemporary-themed bar, serving a range of wines and cocktails, as well as barista teas and coffees, cakes, snacks and light meals throughout the day and night including tapas-style dishes, street food and light bites.

Hilton Garden Inn Sunderland’s general manager, Kim Kelso, said: “The Karbon Grill Kitchen and Bar is a new and vibrant destination, offering North East diners something very different.

“The stylised elements in its design, coupled with the unique Pan-American menu, reflect our desire to make this one of the most popular and unique destinations in the region.

“We’re confident that the contemporary design and mix of premium, affordable and family-friendly cuisine will appeal to hotel guests, city visitors and food-lovers across the region alike. Added to this, the warm and friendly service that the North East is famed for will make it the go-to place in Sunderland.” The Hilton Garden Inn Sunderland, which is currently under construction next to the Stadium of Light, will open in time for Sunderland AFC’s final home games of the season.

Along with the Karbon Grill Kitchen and Bar, the site will have 141 en-suite bedrooms, a 24-hour business centre and a number of meeting rooms.
