A LUXURY hotel has appointed a new head chef to lead its team.
Seaham Hall Hotel and Spa has recruited Simon Bolsover, who has previously worked in some of the world’s most glamorous locations, including hotels in Bermuda and Canada.
He has also worked at Linthwaite House Hotel in Windermere and joins Seaham Hall from the AA-rosetted Great Fosters at Egham in Surrey.
In his new position he will be responsible for the hotel’s recently launched Byron’s Bar and Grill and its pan-Asian Ozone restaurant, within the spa, under the culinary directorship of Martin Blunos.
Mr Blunos remains with owners Seasons, but no longer cooks at Seaham.
Simon said: “Seaham Hall has a vast amount of potential and I am looking forward to developing that potential, sourcing the finest regional ingredients and building on its already excellent reputation.”
Ross Grieve, the hotels general manager, said: “Not only does he bring a wealth of experience but his creativity and skill will make him a crucial part of the team.”
